I've decided to declare the month of June Potato Power Month as far as recipes go as my kids are swimming like crazy this month and always hungry so I'm going to post a great Potato recipe everyday that goes great with summer menus (especially those great grilled foods!)

Loaded Potato Salad with Greek Yogurt, Bacon and Cheddar
2 1/2 pounds potatoes, peeled and cubed
3 slices bacon, cooked crisp, drained, and chopped
2 Tablespoons finely chopped red onion
6 hard boiled eggs peeled &chopped
1 cup plain Greek yogurt
1 cup grated sharp Cheddar cheese
In a large pot of salted water, boil the potatoes until tender. Drain and cool. In a large mixing bowl combine the cooled potatoes, the bacon, red onion, Greek yogurt, and cheese. Stir gently to combine. Season generously with salt and pepper. Chill before serving.
